More: Our birthday beers were a statement that Polly’s were coming back for their hype credentials in 2026, and Like the Skyline is our continuation of that statement into our general releases. A tropical orchard punch of a beer, we’ve hybridised techniques picked up from two of our birthday beers and combined them into this silky, pillowy DIPA. Idaho 7 and Mosaic are a tried and tested combination that we know works here at Polly’s, but why not introduce not only the classic T90 pellets, but their CGX versions to boot – dry-hopped at a slightly warmer temperature to release and encourage all those desirable hop characteristics we love so much. The resulting DIPA is already an in-house favourite amongst the team, our owner Sean noting it as a particular highlight of recent releases.
