Spontaneously Fermented with Wild Microorganisms from the Grape Skins, with pungent aromas of citrus and tropical fruits and medium acidity, carbonated lower than beer to resemble a still wine and aged on lees (batonnage) for a fuller body! Tilting the scale towards wine this time!
